500g lean beef mince
1 brown onion chopped
1/4 cup of corn cut off the cob
1/2 cup red capsicum chopped
2 mushrooms chopped
Old El Paso Fajita spice mix
Old El Paso Mild Chunky Tomato Salsa
Cherry tomatoes (cut) – about 4 full tomatoes per person
Baby spinach leaves (cut up) – handful per person
Heat pan. Place mince, Fajita spice mix and onion in a pan and fry until the mince is brown (no need to add oil as there is enough in the mince to ensure it doesn’t stick – keep it moving).
Add mushrooms, corn and capsicum and cook until just soft.
Spread tomatoes and spinach on a plate and spoon mince mix over the top (about 125gm mince person – 1/4 of mix).
Add a table spoon of the chunky salsa over the top.
